Corn and Two-Bean Burgers with Chipotle Ketchup

The health benefits of veggie burgers compared to meat burgers are undeniable-here is just one of hundreds of delicious veggie burger recipes to try out, I love it!


INGREDIENTS
 
Burger:
2 tablespoons olive oil
1 (15-ounce) can kidney beans, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1/3 cup dry breadcrumbs
1/4 cup canned whole-kernel yellow corn, drained

1/4 cup prechopped onion
1 large egg

Ketchup
1/3 cup ketchup
1 teaspoon honey
1 teaspoon lime juice
1/2 teaspoon chipotle chile powder
1/2 teaspoon ground cumin

Remaining ingredients:
4 (2-ounce) Kaiser rolls or hamburger buns
4 lettuce leaves (optional)
4 (1/4-inch-thick) slices tomato (optional)

Preparation

  1. To prepare burgers, heat oil in a large nonstick skillet over medium-high heat.
  2. Combine kidney beans and black beans in a large bowl; partially mash with a fork. Add breadcrumbs, corn, onion, and egg; stir until well blended. Form bean mixture into 4 (1/2-inch-thick) patties. Add patties to pan; cook 4 minutes on each side or until crisp and beginning to brown.
  3. To prepare ketchup, combine ketchup, honey, lime juice, chile powder, and cumin, stirring with a whisk.
  4. Spread 1 tablespoon ketchup on bottom half of each bun; top each serving with a patty, 1 lettuce leaf and 1 tomato slice (if desired), and top half of bun.
Soya Chunks Manchurian
This is one of the first recipes I tried with Soya, and I absolutely LOVE it! Tell me what you think!

INGREDIENTS

Soya bean chunks, soaked and drained: 1 cup
 Cornflour/ corn starch: 4 teaspoons
 Green chilli paste: 1/2 tablespoon
 Dark soy sauce: 2 teaspoons
 Oil: 1 tablespoon
 Onions, roughly chopped: 2 medium
Spring onions, chopped: 1-2
Ginger, finely chopped: 1 inch piece
Garlic, finely chopped: 3 cloves
Soy sauce: 3 teaspoons
Green chilli sauce: 1 tablespoon
Tomato ketchup: 2 tablespoons
Salt: to taste
Green capsicum, seeded , diced: 1 small
Vinegar: 1 tablespoon
Spring onion greens, finely chopped: 4-5 stalks


METHOD
Mix soya chunks, salt, two teaspoons cornflour, green chilli paste and dark soy sauce in a bowl.
Heat half the oil in a pan, add the soya chunks and sauté for two to three minutes.
 Transfer into a bowl.Add the remaining oil to the same pan and sauté onions, spring onions, ginger and garlic for two to three minutes.
Add soy sauce, green chilli sauce and tomato ketchup and mix.
Add two cups of water and let the mixture come to a boil.
Add the soya chunks and cook for five more minutes. Add salt and mix. Add remaining cornflour dissolved in two tablespoons of water and cook till the mixture thickens slightly.
Add capsicum, stir in vinegar and take it off the heat.
Garnish with spring onion greens and serve hot with fried rice or noodles.
